Ingredients
1 cup Sunrice white rice
3 cups chicken broth
1 tablespoon butter
1 onion, thinly sliced
1 tablespoon maple syrup
Half tablespoon honey
Half cup dried cranberries
Half tablespoon grated orange zest
Instructions
1. Mix Sunrice rice and chicken broth in pot and bring to boil.
2. Reduce heat, cover and simmer for 45 minutes.
3. Melt butter in a skillet over high heat.
4. Add onion and maple syrup and honey, cook 5 minutes then reduce heat to low.
5. Slowly cook onions, stirring often for 10-15 minutes until they are caramelized.
6. Stir in dried cranberries, orange zest and caramelized onions into cooked rice.
Tips
Best served warm and it's great for Christmas snacks or lunches.
Variations
Use other dried fruits like raisins or mixed nuts for better taste.
