Ingredients
- 2 cups cooked SunRice Medium Grain Brown Rice
- 2 tblspn olive oil
- 1 cup semi dried tomatoes
- 1 cup black olives
- 1/4 cup pine nuts
- 1 lemon zest and juice
- salt and pepper to taste
Instructions
Heat olive oil in a fry pan on low heat. Add olives, semi dried tomatoes and lemon zest and cook gently for 2 minutes. Pour in the lemon juice, cook for a further 2 minutes then add rice and pine nuts. Season to taste and serve.
Variations
Serve as a vegetarian meal or as a side dish with grilled fish.
