Ingredients

2 cups SunRice Medium Grain White Rice
4 cups milk
2 tblspn sugar
2 tblspn margarine or butter
1 tspn nutmeg

Instructions

  • Butter a deep oven proof dish.
  • Add milk, uncooked rice, sugar and butter. Stir. Sprinkle with nutmeg.
  • Cook at 180 degrees celcius for 2-2.5 hours until tender. Stir occasionally and add more milk if needed during baking.

Variations

  • Add a handful of sultanas if desired.

Forgot to say that I only cook my version on 140c for 90 minutes.

Cardamon pods added to this recipe (or ground cardamon if you don't have the pods to hand) give this a wonderful flavour. I also add pieces of lemon peel which soften up during the cooking process and just add an interesting twist to this pudding.

This is the recipe my mother used nearly 100 years ago when she first became a cook on a station. She later baked it for her large family who never left a morsel.Thankyou for making it available again.

i tried this recipe,but the cooking time is grossly overstated,and the amount of milk it requires plus the topping up is staggering
