Ingredients
- 1 x 250g SunRice Arborio Risotto Base
- 200g skinless chicken breast, chopped (optional)
- 1 tblspn olive oil
- 1 tblspn cajun spice seasoning
- 6 king prawns, peeled with the tails left on
- 300g mussels, washed
- 1 red capsicum, chopped
- 2 tspn smoked paprika
- 100g frozen green peas
- 1 cup low salt chicken stock
- 400g tin chopped and peeled tomatoes
- 1 small bunch parsley, chopped
Instructions
Microwave SunRice Arborio Rice Risotto Base as per pack instructions. Saute onion and chicken in olive oil in a large fry pan until browned. Add king prawns, mussels, capsicum, cajun spice and paprika. Add the peas and tomatoes. Add the rice along with chicken stock. Simmer for 8 minutes until mussels have opened. Serve garnished with parsley.
Variations
Vegetarians can replace seafood and chicken with tempeh and extra vegetables.

my hubby isn't a rice eater but I just love it and this recipe went down a treat with him.
would be great if saffron is added as well
