Ingredients

  • 4 SunRice Thick Plain Rice Cakes
  • 4 eggs poached
  • 4 cups fresh baby spinach
  • 2 tspn extra virgin olive oil
  • 1 tspn balsamic vinegar
  • salt and pepper to taste
  • 8 tblspn hollandaise sauce

Instructions

Whisk together the oil, vinegar, salt and pepper. Toss the baby spinach in the dressing and place onto the rice cakes.
Place freshly poached eggs on top and pour over the hollandaise sauce.

Tips

To poach eggs, fill a shallow sauce pan with water and bring to the boil, pour in 2-3 tblspns of white vinegar, crack eggs one by one into a small dish. Lower dish in to the water and poach for 2-3 minutes for a soft egg. Lift egg out with a slotted spoon and place on a kitchen towel to drain.

Variations

Add crispy bacon or smoked salmon for a more substantial meal.
