Ingredients

500g lamb or pork mince
1/2 cup of rice
1/2 onion finely diced
420g can of tomato soup
1 tspn beef stock powder
1 tblspn parsley finely chopped

Instructions

  • Pour tomato soup into a saucepan and dilute with water according to instructions on can.
  • Mix all other ingredients together.
  • Form into golf ball sized meatballs.
  • Heat soup to a simmer and add meatballs.
  • Simmer soup until meatballs are cooked.
  • Serve with additional plain cooked rice and vegetables.

Tips

  • Can be cooked before hand and easily reheated.

brown the meatballs first and add fresh time to sauce for more flavour and a crunchier texture.
