Ingredients
sauce
- 700g bottle tomato passata
- 2 tomatoes, chopped
- 1 1/2 cups chicken stock
- 2 cloves garlic, crushed
- 1 tspn sugar
- 1 tspn Italian dried herbs
- ground black pepper
meat balls
- 1 cup cooked SunRice Country Vegetable Medley
- 500g beef mince
- 1 small brown onion, chopped
- 2 cloves garlic, crushed
- 1 egg, lightly beaten
- 1 1/2 tblspn tomato sauce
- 1 tspn Italian dried herbs
- ground black pepper
to serve
- mashed potato
- fresh basil leaves (optional)
Instructions
Combine all sauce ingredients in a large flameproof casserole dish or large saucepan; bring to a boil. Meanwhile, place all meat ball ingredients in a large bowl and mix together well. Take tablespoons of mixture; form into balls and place on a tray. Drop meatballs into sauce. Lower heat; cover and simmer for 45 minutes, until rice is tender (do not stir meatballs). Serve with mashed potato and top with basil leaves.
Variations
Top with grated parmesan cheese

this recipe great for when the grand kiddies come over this is a favourite. **** :)
For those out there who, like me, are allergic to fresh tomatoes but are able to have things like tomato sauce - exchange the Tomatoes for Spicy tomato soup - it's great
family favourite. cheap and easy to prepare. Freezes well too...

brings back great memories of our family dinners - I learnt how to cook this at school so it was one of my favorites to let Mum have a rest!!
