Ingredients

1 cup SunRice Long Grain White Rice
1 kg beef mince
2 tblspn dried mixed herbs
1 onion, finely chopped
1 clove garlic, crushed
2 eggs
salt and pepper
2 large tins tomato soup

Instructions

  • Preheat oven to 180 degrees C.
  • In a large bowl mix all the ingredients except the tomato soup.
  • Once mixed well, roll ingredients into meatballs.
  • Line the bottom of the baking tray with tomato soup, just enough to cover the bottom.
  • Place meatballs in the soup in the tray. Pour remainder of soup over the meatballs, covering them well.
  • Baked meatballs for 45 minutes or until cooked through.

Tips

  • Make sure you check and stir the meatballs at the around so they dont stick.

Mum always made these for us as a kid, looking for a recipe for a long time. Great reheated the flavours develop & sauce goes real thick

You can also cook this in a pot on simmer and add a small cube of cheese to the centre of each meatball - Delicious alternative
