Ingredients

  • 1 cup of SunRice Long Grain Rice
  • 1 tspn chicken stock
  • 1 onion, chopped
  • 4 rashers bacon
  • 2 tblspns of sultanas
  • 2 tblspns of desicated coconut
  • 2 eggs
  • Spring onions
  • Slithered almonds

Instructions

  • Cook rice as per pack instructions add chicken stock instead of water.
  • Fry chop onion and bacon until golden and add sultanas. Set aside and add coconut.
  • Beat eggs and cook in pan like a pancake. Chop into small pieces and add to mixture. Chop the green parts of the spring onions (about 1/3 cup) and add to mixture.
  • When rice is cooked and drained add to mixture.
  • Fry slithered almonds in a little butter until golden brown and then scatter on rice mixture.
  • Ready to serve.
