Ingredients

  • 1 cup cooked Medium grain white rice
  • 300g tinned tuna, drained
  • 1 yellow capsicum, diced
  • rind and juice from 1 lemon
  • 3 spring onion (shallots) sliced
  • 1 bunch parsley, chopped
  • 1 bunch mint, chopped
  • 1 tblspn olive oil

Instructions

Combine rice, tuna and capsicum. Chop lemon rind, spring onions, parsley and mint. Mix all remaining ingredients through. Drizzle with olive oil. Eat and enjoy!
