Ingredients
- 1 cup cooked Medium grain white rice
- 300g tinned tuna, drained
- 1 yellow capsicum, diced
- rind and juice from 1 lemon
- 3 spring onion (shallots) sliced
- 1 bunch parsley, chopped
- 1 bunch mint, chopped
- 1 tblspn olive oil
Instructions
Combine rice, tuna and capsicum. Chop lemon rind, spring onions, parsley and mint. Mix all remaining ingredients through. Drizzle with olive oil. Eat and enjoy!
