Ingredients

Mince meat
1 can chopped tomatoes
1 diced onion
4 finely chopped mushrooms
1 finely chopped carrot
1 finely chopped potato
1/2 tspn garlic
1 large spoon of soy sauce
1 tspn of extra virgin olive oil
1 1/2 cups of rice

Instructions

  • Heat the olive oil in the pan.
  • Brown the mince.
  • Add the soy sauce, onion and mushroom. Allow to brown.
  • Add tomatoes, potato, carrot and garlic (now your children are getting some vegies that they don't know about!!).
  • Turn the heat to low and stir occassionally.
  • Cook the rice in the microwave, whatever amount of rice, just double the water and cook (usually around 1 1/2 cups in 3 cups of water and cook for 10-12 minutes).
  • Easy and the kids love it.

Make this for hubbie with Basmati Rice and without the mushrooms. I find cooking rice on the stove via the Rapid Boil Method works better than the microwave.
