Ingredients

  • 500g lean mince (beef, lamb or chicken)
  • 1 1/2 cups cooked SunRice Long Grain Rice
  • 1 tblspn basil, chopped
  • 1 small red chilli, chopped
  • 1 red onion, chopped
  • 2 cloves garlic, chopped
  • 1 egg
  • FOR SERVING: 8 slices toasted bread or focaccia (or rolls), 1/4 cup pesto, 8 slices roasted egg plant, 8 slices roasted capsicum, 150g assorted green leaves (lettuce, spinach), 1/2 cup tomato salsa.

Instructions

  • Combine all burger ingredients in a large bowl, till well mixed then shape to form 8 patties.
  • Heat a little oil in fry pan over medium heat and cook patties for a couple of minutes each side or till cooked through.
  • Place lettuce, capsicum, eggplant & salsa nicely on and around a plate.
  • Serve patties on bread with pesto.
