Ingredients
- 500g lean mince (beef, lamb or chicken)
- 1 1/2 cups cooked SunRice Long Grain Rice
- 1 tblspn basil, chopped
- 1 small red chilli, chopped
- 1 red onion, chopped
- 2 cloves garlic, chopped
- 1 egg
- FOR SERVING: 8 slices toasted bread or focaccia (or rolls), 1/4 cup pesto, 8 slices roasted egg plant, 8 slices roasted capsicum, 150g assorted green leaves (lettuce, spinach), 1/2 cup tomato salsa.
Instructions
- Combine all burger ingredients in a large bowl, till well mixed then shape to form 8 patties.
- Heat a little oil in fry pan over medium heat and cook patties for a couple of minutes each side or till cooked through.
- Place lettuce, capsicum, eggplant & salsa nicely on and around a plate.
- Serve patties on bread with pesto.
