Ingredients
- 4 SunRice Rice & Corn Cakes
- 1 ripe avocado
- 1 tspn lime juice
- Tabasco sauce, to taste
- Salt, to taste
- 1 tomato, seeded and diced
- 1/2 small red onion, diced
- 1 tblspn coarsely chopped coriander leaves
- 1/2 tspn olive oil
Instructions
- Remove seed from the avocado and mash.
- Add 1/2 tspn lime juice, Tabasco sauce and salt. Mix to combine.
- In a separate bowl, combine tomato, onion and coriander. Drizzle with olive oil and the remaining 1/2 tspn lime juice; toss gently.
- Top rice cakes with guacamole and salsa.
- Serve immediately.
Variations
- Substitute lemon juice for lime juice.
- For a faster option use packaged guacamole dip.
