Ingredients

  • 4 SunRice Rice & Corn Cakes
  • 1 ripe avocado
  • 1 tspn lime juice
  • Tabasco sauce, to taste
  • Salt, to taste
  • 1 tomato, seeded and diced
  • 1/2 small red onion, diced
  • 1 tblspn coarsely chopped coriander leaves
  • 1/2 tspn olive oil

Instructions

  • Remove seed from the avocado and mash.
  • Add 1/2 tspn lime juice, Tabasco sauce and salt. Mix to combine.
  • In a separate bowl, combine tomato, onion and coriander. Drizzle with olive oil and the remaining 1/2 tspn lime juice; toss gently.
  • Top rice cakes with guacamole and salsa.
  • Serve immediately.

Variations

  • Substitute lemon juice for lime juice.
  • For a faster option use packaged guacamole dip.
