Ingredients
1 1/2 cups of cooked SunRice rice
1 green capsicum seeded and coarsley chopped
1 medium onion finely chopped
2 canned peach halves finely chopped
2 1/2 teaspoons chutney
2 1/2 teaspoons mayonnaise
1 teaspoon curry powder disolved in 1/4 cup of vinegar
Sugar to taste
Instructions
- Combine all the ingredients in a large bowl.
- Chill before serving.
Tips
- Excellent for Barbeques.
Variations
- Use chopped tomatoes instead of chutney.
- Use Apricots instead of peaches.
