Ingredients

2 cups SunRice Arborio Rice
1 tblspn olive oil
2 cloves garlic, crushed
1 red chilli, chopped finely
400g tin crushed tomatoes
1 tin chickpeas
1 1/2 cups vegetable stock
shaved parmesan

Instructions

  • Heat oil in a large saucepan and fry garlic and chilli for 1 minute.
  • Add rice to the pan and stir until grains coated in the oil.
  • Add tomatoes, chickpeas and stock.
  • Simmer on low heat for 30 minutes, stirring often.

Serve with shaved parmesan.

Variations

  • Leave out chilli when serving to children.
  • SunRice Medium Grain Rice can also be used in place of the Arborio Rice.
