Ingredients
2 cups SunRice Medium Grain White Rice
1 tblspn olive oil
2 cloves garlic, crushed
1 onion, finely diced
2 cups baby peas
2 cups vegetable stock
Instructions
- Fry garlic and onion in olive oil until soft.
- Add peas and stir.
- Add stock and rice.
- Simmer gently with lid on, stirring occasionally, until rice is cooked.
Tips
- Serve with lots of ground black pepper.
Variations
- Use a leek instead of the onion.
- For a more wholesome meal, SunRice Medium Grain Brown Rice can be used but increase quantity of stock and cooking time accordingly.
