Ingredients

2 cups SunRice Medium Grain White Rice
1 tblspn olive oil
2 cloves garlic, crushed
1 onion, finely diced
2 cups baby peas
2 cups vegetable stock

Instructions

  • Fry garlic and onion in olive oil until soft.
  • Add peas and stir.
  • Add stock and rice.
  • Simmer gently with lid on, stirring occasionally, until rice is cooked.

Tips

  • Serve with lots of ground black pepper.

Variations

  • Use a leek instead of the onion.
  • For a more wholesome meal, SunRice Medium Grain Brown Rice can be used but increase quantity of stock and cooking time accordingly.
