Ingredients
- 2 cups of cooked SunRice Doongara Clever Rice
- 4 tblspn olive oil
- 4 cloves of garlic crushed
- 600g tomatoes, (any type) washed, large tomatoes cut in half, leave small tomatoes whole
- 4 medium sized zucchini, cut into thick slices or strips
- 1 tblspn brown sugar
- 1 cup vegetable stock
- 1/2 bunch basil, pick of the whole leaves
- salt and pepper to taste
Instructions
Preheat oven to 180ÂșC. Pour oil into an ovenproof dish, add garlic tomatoes, zucchini and sprinkle with sugar. Place into the oven and bake for ten minutes uncovered. Add stock and bake for a further ten minutes or until tomatoes are soft. Season with salt and pepper, add basil leaves and stir gently. Serve with cooked SunRice Doongara Clever Rice.
Tips
Drizzle with a little extra virgin olive oil.
Variations
Add olives and sprinkle with small cubes of fetta cheese.
