Ingredients

  • 2 tblspns oil
  • 1 egg
  • 1 cup SunRice White Medium Grain Rice
  • 210g tin salmon
  • 1 tblspn of reserved salmon juice
  • 2 tspns grain mustard
  • 3/4 cup breadcrumbs
  • Salt & pepper to taste

Instructions

  • Cook rice in boiling water until cooked, then drain and refresh.
  • Mix egg in a bowl lightly with a fork.
  • Combine rice, salmon, salmon juice and mustard.
  • Add salt and pepper to taste.
  • Divide mixture into 4 patties and coat with breadcrumbs.
  • Heat oil in a non-stick fry pan, and fry patties on both sides until light golden brown.

Tips

  • Served with salad

Variations

  • Substitute with tuna.
