Ingredients
- 2 tblspns oil
- 1 egg
- 1 cup SunRice White Medium Grain Rice
- 210g tin salmon
- 1 tblspn of reserved salmon juice
- 2 tspns grain mustard
- 3/4 cup breadcrumbs
- Salt & pepper to taste
Instructions
- Cook rice in boiling water until cooked, then drain and refresh.
- Mix egg in a bowl lightly with a fork.
- Combine rice, salmon, salmon juice and mustard.
- Add salt and pepper to taste.
- Divide mixture into 4 patties and coat with breadcrumbs.
- Heat oil in a non-stick fry pan, and fry patties on both sides until light golden brown.
Tips
- Served with salad
Variations
- Substitute with tuna.
