Ingredients

2 large brown onions
1 clove garlic
1 tblspn olive oil
1 cup SunRice long grain white rice
2 cups water
1 tspn salt

Instructions

  • Cook rice in rice-cooker or add rice to 2 cups of water and 1 teaspoon salt in large saucepan. Bring water to boil and simmer on very low heat until rice is cooked (about 12 minutes).
  • Meanwhile, chop garlic and onion. Heat oil in pan and add garlic, stirring until golden. Add chopped onions and continue stirring until onions are golden brown.
  • When rice is cooked, stir onions and garlic through the rice and eat immediately.

Tips

  • Don't cook garlic for too long or it will become bitter.

Variations

  • Add a tin of drained peas or peas and corn after adding the onions.
  • You can stir-fry the rice and onions after they're cooked, so the rice becomes crisp.

This recie sounds great for someone (like my son) who cant have chinese fried rice because of the egg and capsicum usually in it! **** I'm susre he will love this recipe!
