Ingredients
2 large brown onions
1 clove garlic
1 tblspn olive oil
1 cup SunRice long grain white rice
2 cups water
1 tspn salt
Instructions
- Cook rice in rice-cooker or add rice to 2 cups of water and 1 teaspoon salt in large saucepan. Bring water to boil and simmer on very low heat until rice is cooked (about 12 minutes).
- Meanwhile, chop garlic and onion. Heat oil in pan and add garlic, stirring until golden. Add chopped onions and continue stirring until onions are golden brown.
- When rice is cooked, stir onions and garlic through the rice and eat immediately.
Tips
- Don't cook garlic for too long or it will become bitter.
Variations
- Add a tin of drained peas or peas and corn after adding the onions.
- You can stir-fry the rice and onions after they're cooked, so the rice becomes crisp.
