Ingredients

  • 1 SunRice Singapore Style Fried Rice in 90 seconds
  • 1 tbsp vegetable oil
  • 1 tbsp ginger (finely sliced)
  • 2 cloves garlic (chopped)
  • 1 red chilli (chopped)
  • 250g prawns (raw, peeled and tail off)
  • 12 cherry tomatoes
  • ½ bunch coriander or Thai basil (chopped)
  • salt to taste

Instructions

  • Heat SunRice Singapore Style Fried Rice in 90 seconds as per pack instructions.
  • Heat oil in a pan on medium heat, add garlic, ginger and chilli and fry gently for 30 seconds.
  • Add prawns and cherry tomatoes, fry until prawns are cooked.
  • Add coriander and season.
  • Place SunRice Singapore Style Rice on to a plate and top with prawns.

Tips

Garnish with a wedge of fresh lime and sprigs of Thai basil.

Variations

Try this with chunky pieces of fresh salmon instead of prawns.

This is the recipe which set my husband off on his cooking odyssey. We discovered the 90 second range which was on special while travelling in NZ.
