Ingredients
- 1 tblspn cooking oil
- 1 1/4 unsalted pine nuts pealed and finally chopped
- 1 tblspn grated coconut (from bag)
- 2 cups of coconut milk
- 500ml water
- 1 stalk lemon grass
- 4 kaffir lime leaves
- 2 big spring onion, sliced
- 1 tspn cumin
- 1/2 tspn cardamom
- 1/2 tspn turmeric
- 2 cups of SunRice Long Grain Rice
Instructions
- Heat up oil in a pot, add pine nuts and fry them golden, stir constantly, and then add grated coconut.
- Add coconut milk, water, lemon grass, kaffir lime leaves and spring onion. Bring to boil then simmer for 2 mins.
- Add turmeric, cardamom and cumin then bring to boil. Add the rice boil without lid until steam channels forms on the surface.
- Place lid and slowly simmer for 10 mins on very low heat.
- Ensure the rice is cooked otherwise simmer for a little longer.
