Ingredients

  • 1 tblspn cooking oil
  • 1 1/4 unsalted pine nuts pealed and finally chopped
  • 1 tblspn grated coconut (from bag)
  • 2 cups of coconut milk
  • 500ml water
  • 1 stalk lemon grass
  • 4 kaffir lime leaves
  • 2 big spring onion, sliced
  • 1 tspn cumin
  • 1/2 tspn cardamom
  • 1/2 tspn turmeric
  • 2 cups of SunRice Long Grain Rice

Instructions

  • Heat up oil in a pot, add pine nuts and fry them golden, stir constantly, and then add grated coconut.
  • Add coconut milk, water, lemon grass, kaffir lime leaves and spring onion. Bring to boil then simmer for 2 mins.
  • Add turmeric, cardamom and cumin then bring to boil. Add the rice boil without lid until steam channels forms on the surface.
  • Place lid and slowly simmer for 10 mins on very low heat.
  • Ensure the rice is cooked otherwise simmer for a little longer.
