Ingredients

4 SunRice cakes (any flavour - I use plain)
Low fat butter/spread (optional)
Vegemite
Tomato (sliced thinly)
Spanish onion (sliced thinly)
Beetroot slices
Rocket leaves (handful)
Coriander leaves (optional)

Instructions

  • Spread rice cakes evenly with butter and vegemite.
  • Place onion slices, followed by tomato and beetroot in even layers.
  • Top with rocket and coriander leaves.

Tips

  • Taste Sensation.

Variations

  • Serve with olives if desired.
  • Add shredded chicken for protein.
