Ingredients
- 2 cups brown rice, cooked and cooled
- 1 large handful baby spinach, chopped
- 1/4 cup roasted cashew nuts (optional)
- 2 spring onion (shallots) sliced
- 1 cucumber, finely diced
- 1 red capsicum, finely diced
- 1 bunch coriander, chopped
- 1 packet prepared tofu bags (yamato ajitsuke inari)
Dressing
- 1/4 cup mirin
- 2 tbspn wheat free tamari soy sauce
- 1 tbspn tahini (sesame seed paste)
Instructions
Combine rice, spinach, nuts, spring onion, cucumber, capsicum and coriander into a bowl. Combine the dressing ingredients and mix through the rice and vegetables. Stuff into prepared tofu bags and serve.
