Ingredients

  • 2 cups brown rice, cooked and cooled
  • 1 large handful baby spinach, chopped
  • 1/4 cup roasted cashew nuts (optional)
  • 2 spring onion (shallots) sliced
  • 1 cucumber, finely diced
  • 1 red capsicum, finely diced
  • 1 bunch coriander, chopped
  • 1 packet prepared tofu bags (yamato ajitsuke inari)

Dressing

  • 1/4 cup mirin
  • 2 tbspn wheat free tamari soy sauce
  • 1 tbspn tahini (sesame seed paste)

Instructions

Combine rice, spinach, nuts, spring onion, cucumber, capsicum and coriander into a bowl. Combine the dressing ingredients and mix through the rice and vegetables. Stuff into prepared tofu bags and serve.
