Ingredients

  • 2 cups cooked SunRice Jasmine Rice Medleys
  • 400g chicken mince
  • 6 cups hot chicken stock
  • 2 tblspn corn flour
  • 2 tblspn water
  • 2 eggs
  • 1/2 cup sliced spring onion

Instructions

Place chicken mince in a saucepan, pour in the hot chicken stock, stir and bring to the boil. Add the rice. Combine water and corn flour and pour into the boiling soup while stirring, simmer for a further 2 minutes. Crack eggs into a small bowl, whisk lightly with a fork and stir into the simmering soup. Ladle soup into bowls and garnish with spring onion.

Tips

Add sliced chilli and a few drops of vinegar for a hot and sour Thai soup.

Variations

Add more cornflour for a thicker soup.
