Ingredients

  • 2 cups SunRice Arborio Mediterranean Rice
  • 2 tblspn olive oil
  • 1 onion finely diced
  • 1 tspn crushed garlic
  • 2 cans of diced tomatoes
  • 1 1/2-2 cups of hot vegetable or chicken stock
  • 1/2 bunch of basil roughly chopped or torn
  • 6 tblspns grated parmesan cheese
  • salt and pepper to taste
  • additional parmesan to sprinkle on top

Instructions

In a saucepan combine stock and diced tomatoes and heat. Heat oil in a saucepan, add onions and garlic and cook on a moderated heat for 2 minutes without color. Add rice and cook for a further 2 minutes, stirring until rice is well coated and glossy. Add 1 cup of hot tomato stock at a time, stirring until absorbed before each new addition, until rice is just tender. Stir in parmesan cheese and basil, check seasoning and serve. Sprinkle with additional parmesan to your liking.

Variations

Add diced smoked ham or garnish with crispy fried prosciutto.
