Ingredients
- 2 cups SunRice Long Grain Rice
- 1 tin tomatoes
- 1 garlic clove, finely chopped
- 1 cup basil leaves, finely chopped
- 1/2 cup finely chopped spring onion
- 1/2 cup pine nuts
- 1/2 cup shaved parmesan cheese
Instructions
- Cook rice as per pack instruction, allow to cool then chill.
- Crush tomatoes and place in a bowl, add garlic, basil, spring onion and pine nuts.
- Combine all ingredients loosely. Place in a salad bowl and top with shaved parmesan.
- Ready to serve.
Tips
- Serve as a side dish with bbq meats, chicken or fish.
Variations
- Swap basil for dill or parsley.
