Ingredients
- 3 cups SunRice Long Grain White Rice
- 1 chopped onion
- 1 large tin of tuna
- 1 squeeze of lemon juice
- 1 small carton of low fat sour cream
Instructions
- Cook rice as per pack instructions.
- While rice is cooking microwave the onion in a jug on high till tender then stir in remaining ingredients.
- Return to the microwave for another two minutes on high.
- Divide rice into four bowls top with the tuna mixture then garnish with unsalted cashews.
- Ready to serve.
Tips
- Kids will love it.
Variations
- Substitute the sour cream for chopped tomatoes and green peppers for a spicy change.
