Ingredients

  • 3 cups SunRice Long Grain White Rice
  • 1 chopped onion
  • 1 large tin of tuna
  • 1 squeeze of lemon juice
  • 1 small carton of low fat sour cream

Instructions

  • Cook rice as per pack instructions.
  • While rice is cooking microwave the onion in a jug on high till tender then stir in remaining ingredients.
  • Return to the microwave for another two minutes on high.
  • Divide rice into four bowls top with the tuna mixture then garnish with unsalted cashews.
  • Ready to serve.

Tips

  • Kids will love it.

Variations

  • Substitute the sour cream for chopped tomatoes and green peppers for a spicy change.
