Ingredients
1 cup SunRice Wild Blend Entertainer Rice
3 cups shredded cooked turkey
2 celery stalks, chopped
3 shallots, sliced
1/2 cup sweetened dried cranberries
1/2 cup toasted pecans, coarsely chopped
2 cups baby spinach
Dressing
1/3 cup olive oil
1 tblspn cider vinegar
2 tblspn fresh orange juice
1 clove garlic, crushed
1 tspn ground cumin
1 tspn ground coriander
Instructions
- Cook rice as per directions on pack. Allow rice to cool.
- Mix all remaining salad ingredients with the rice.
- For the dressing, whisk together all dressing ingredients until combined. Pour over salad and gently stir.
Variations
- use SunRice Long Grain white or Brown rice in place of Wild Blend Rice
- use cooked chicken or chopped ham in place of turkey
