Ingredients

  • 3/4 cup SunRice Arborio Mediterranean Rice
  • 4 cups (1 litre) milk
  • 1/4 cup castor sugar
  • 1 tspn vanilla essence
  • 2 tblspn cream (optional)
  • 4 jam and sponge rolls (optional)
  • 2 cups fresh or canned fruit, sliced: peaches, apricots, kiwi fruit

Instructions

Combine milk, sugar and vanilla in a medium saucepan. Bring to the boil, stirring occasionally. Gradually stir in rice, cover pan and cook over low heat, stirring occasionally, for 45 minutes or until most of liquid is absorbed. Remove from heat, stir in cream (optional) and allow to cool. Slice sponge rolls and place in base of each tall glass. Top with alternating layers of creamy rice and sliced fruit. Serve chilled.

Variations

Sprinkle 1/2 teaspoon ground cinnamon or nutmeg on cooked rice for added flavour.
Stir chopped dried apricots, sultanas, or other dried fruit through cooked rice.

Sounds like a great change to the traditional trifle, with less fuss. sounds like it will be a winner in my family.
