Ingredients
1 1/2 cups SunRice Long Grain White Rice
2 large eggs, lightly beaten
1 cup grated cheddar cheese
1 tblspn olive oil
1 cup thinly sliced red capsicum, thinly sliced
1 cup thinly sliced mushrooms
1 cup thinly sliced zucchini
1 cup thinly sliced onion
1/3 cup black olives, drained
3/4 cup prepared pizza sauce
1 1/2 cups grated mozzarella cheese
1/4 cup grated parmesan cheese
Salt and pepper
Instructions
- Cook rice as per directions on pack. Cool for about 5 minutes, stirring occasionally with a fork.
- Add eggs and cheddar cheese to rice and mix well. Scrape rice mixture into a greased 9x13" (23x33cm)pan and pat into an even layer.
- Bake in a 200 degrees celcius oven for 15-20 minutes or until rice begins to brown around edges.
- Meanwhile, heat 1 tablespoon of oil in a hot fry pan and add capsicum, mushrooms, zucchini and onion. Saute for 3-5 minutes or until mushrooms begin to brown. Stir in olives. Remove from heat.
- Spread pizza sauce evenly over baked rice base and sprinkle with mozzarella cheese. Spoon vegetable mixture over crust and top with parmesan cheese.
- Return to oven and bake for 8-10 minutes or until parmesan begins to brown. Add salt and pepper to taste. Cut into rectangles and lift from pan with a spatula.
