Ingredients
1 onion medium quartered & sliced
3 tomatoes small to medium sized quartered & sliced
1 capsicum cut into strips
8 mushrooms sliced
2 tblspn sour cream
25g butter or 1 tbsp oil for cooking
Salt & pepper
Paprika
12 Original Rice Cakes
Instructions
- Saute veggies in butter or oil with salt & pepper until soft.
- Remove from the heat & add sour cream. Mix well before returning to the heat. Heat through.
- Serve a portion on each rice cake with a pinch of paprika for garnish.
Tips
- Best eaten immediately.
Variations
- Could also serve on Rice & Corn cakes or add butter, salt & pepper to jasmine rice and serve on top as a main dish.
