Ingredients
- 1 x 300g SunRice Heat & Serve Brown Rice in 2 minutes
- 2 tbsp olive oil
- 1 onion, sliced thin
- 500g mushrooms, halved
- 2 tsp paprika
- ΒΌ cup vegetable stock
- 400g tin cannellini beans, drained
- 3 tbsp light sour cream
- 2 tbsp parsley, chopped
- Steamed broccolini to serve
Instructions
- Saute mushrooms and onion in oil over medium heat until golden brown. Add paprika and stir through
- Add stock, beans, sour cream and parsley. Stir occasionally
- Microwave rice as per pack instruction and serve meal with steamed broccolini
