Ingredients
- 4 cups SunRice Brown Rice (cooked)
- 1 x 400g tin cooked brown lentils (drained)
- 2 spring onions sliced
- 500g pumpkin cut into chunks and roasted
- 400g peeled endanami soy beans, broad beans or green peas
Dressing
- 1 tbspn white miso paste
- 1 tbspn tahini
- Juice from 3 limes
- 1 tbspn maple syrup
- water to mix if needed
Instructions
Combine dressing ingredients and set aside. In a large bowl combine brown rice, lentils and spring onions. Add about half the dressing and mix well. Fold in the pumpkin and beans gently. Spoon into serving bowls and enjoy! Serve with extra dressing if needed.
