Ingredients

2 zucchini
5 eggs
1 onion
3 rashers of bacon
1 cup grated cheese
1 cup self-raising flour
1/2 cup oil

Instructions

  • Pre heat oven to 180°C.
  • Grate unpeeled zucchini.
  • Finely chop onion.
  • Grate cheese.
  • Chop bacon into small pieces.
  • Combine all ingredients and mix until all combined.
  • Place in a baking dish and cook for 30-40 mins until slightly brown.

Variations

  • Serve with salad or rice or anything.

For those of you that don't know. 2 zuchinni's = 2 cups grated.

Have made this for 30 odd years. Can use Choko instead of Zuchinni if you have them growing. Make sure you peel them first though. Also grate the onion please. It cook's in the required time. Yes this recipe can be made with most any veggie as one other cook mentioned. You are only limited by what veggies are in season. Yummy tucker!!!!!

I know this recipe. **** It is easy,adaptable (can change vegies according to what you have on hand,can omit bacon)and good hot or cold. **** Great for using up those extra zucchinis ths time of year, great for lunchboxes.
